Watermelon & Halloumi Skewers
Ingredients (makes approx. 4 skewers):
- 300 g halloumi
- 400 g watermelon
- 2 tbsp olive oil
- Juice of 1 lime
- Fresh mint
- Skewers (wooden or metal)
Preparation:
- Cut the halloumi and watermelon into evenly sized cubes.
- Thread them alternately onto the skewers.
- Brush with olive oil and grill over medium heat for around 2–3 minutes on each side.
- Drizzle with lime juice and serve with fresh mint.
Colourful Grilled Chicken & Vegetable Tacos
Ingredients (serves approx. 4):
Tacos:
- 8 small tortillas
- 2 chicken breast fillets
- 200 g green asparagus
- 200 g mushrooms
- 200 g cherry tomatoes
- 1 tbsp olive oil
- Salt & pepper
- Paprika powder
Sour Cream:
- 200 g sour cream
- 1 garlic clove
- Juice of ½ lime
- Salt
- Chives
Preparation:
- Season the chicken with olive oil, paprika powder, salt and pepper.
- Place the asparagus, mushrooms, tomatoes and chicken on the plancha. Cook the chicken for about 6–8 minutes on each side.
- Remove the chicken from the plancha and slice it into strips.
- For the dip, mix the sour cream with lime juice, garlic, chives and salt.
- Warm the tortillas briefly on the grill.
- Fill with the vegetables, chicken and sour cream, then serve.


Marinated Chicken Skewers with Peanut Sauce
Ingredients (serves approx. 4):
Chicken skewers:
- 600 g chicken breast
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp honey
- 1 garlic clove
- 1 tsp grated ginger
- 1 tsp paprika powder
- Salt & pepper
Peanut sauce:
- 3 tbsp peanut butter
- 100 ml coconut milk
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp honey
- Chilli flakes to taste
Preparation:
- Cut the chicken into cubes.
- Mix all the marinade ingredients together and marinate the chicken for at least 1 hour.
- Thread the chicken onto skewers.
- For the peanut sauce, mix all the ingredients together and gently warm if required.
- Grill the chicken skewers over medium to high heat for around 10–12 minutes, turning regularly.
- Serve with the peanut sauce and garnish with peanuts, coriander and lime wedges if desired.
